Chitin is a straight-chain polysaccharide composed of N-acetyl-D-glucosamine linked by β-1,4-glycosidic bonds. Its molecular structure contains a large number of acetylamino and hydroxyl groups, and these functional groups give chitin many unique properties. The structure is similar to that of cellulose, but the presence of acetylamino groups in the chitin molecule makes its chemical and physical properties different from those of cellulose.
